You would struggle to notice the difference.

I wouldn't go with a 2mm spacer as they wouldn't be hub centric

The date for your diary is the 23rd of June 2019. Whilst the event gets bigger every year so does the amount of people/cars we take there!

It's a car show but it's also a fun packed weekend away. :d

Notoriously difficult to bleed. You do need the front up as high as you can get it and yes you can top up whilst the engine is running. It's impossible to do it if you don't really as the cooling system goes in to meltdown when you have an air lock and you end up with more on the floor than anywhere...
